  • 1 pound beef stew meat, cut into 1-inch cubes
  • 2 tablespoons vegetable oil
  • 4 cups beef broth
  • 1 cup water
  • 3 large potatoes, peeled and diced
  • 2 carrots, sliced
  • 1 onion, chopped
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 1/2 teaspoon ground black pepper
  • 2 cups chopped tomatoes
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 1 cup frozen green beans

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the beef stew meat and cook until browned on all sides.
  2. Add the beef broth, water, potatoes, carrots, onion, basil, parsley, and pepper. Bring to a boil, then reduce heat to low and simmer for 1 hour.
  3. Add the chopped tomatoes, frozen corn, peas, and green beans. Cook for an additional 30 minutes, or until vegetables are tender.
