- 1 pound beef stew meat, cut into 1-inch cubes
- 2 tablespoons vegetable oil
- 4 cups beef broth
- 1 cup water
- 3 large potatoes, peeled and diced
- 2 carrots, sliced
- 1 onion, chopped
- 1 teaspoon dried basil
- 1 teaspoon dried parsley
- 1/2 teaspoon ground black pepper
- 2 cups chopped tomatoes
- 1 cup frozen corn
- 1 cup frozen peas
- 1 cup frozen green beans
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the beef stew meat and cook until browned on all sides.
- Add the beef broth, water, potatoes, carrots, onion, basil, parsley, and pepper. Bring to a boil, then reduce heat to low and simmer for 1 hour.
- Add the chopped tomatoes, frozen corn, peas, and green beans. Cook for an additional 30 minutes, or until vegetables are tender.
