Ingredients

  • 1 (9 inch) unbaked pie crust
  • 3/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 2 large eggs
  • 1 can (15 oz) pure pumpkin
  • 1 can (12 fl oz) evaporated milk

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Mix sugar, cinnamon, salt, ginger, and cloves in a small bowl.
  3. Beat eggs in a large bowl, then stir in pumpkin and sugar-spice mixture.
  4. Gradually stir in evaporated milk.
  5. Pour into pie crust.
  6. Bake for 15 minutes. Reduce temperature to 350°F (175°C); bake for 40-50 minutes or until a knife inserted near the center comes out clean.
  7. Cool on a wire rack for 2 hours.
