Ingredients
2 tablespoons butter
1 onion, chopped
1/4 cup melted butter
1/4 cup flour
2 cups half-and-half cream
2 cups chicken stock
1/2 pound fresh broccoli
1 cup carrot, julienned
1/4 teaspoon nutmeg
8 ounces grated sharp cheddar cheese
Salt and pepper to taste
Instructions
Melt 2 tablespoons butter in a pot over medium heat. Add onions and cook until soft.
In another pot, melt 1/4 cup butter and add flour, stirring for 3-5 minutes over medium heat.
Slowly add half-and-half, constantly stirring until thickened.
Add chicken stock and simmer for 20 minutes.
Add broccoli, carrots, and onions. Cook over low heat for 20-25 minutes.
Add salt, pepper, and nutmeg.
Remove from heat and add cheese, stirring until well blended.
Serve hot.
