Ingredients

1 box (16 ounces) penne pasta
2 tablespoons olive oil
2 cloves garlic, minced
1 onion, chopped
4 large Portobello mushrooms, sliced
2 cups fresh spinach
1 cup sour cream
1 cup grated Parmesan cheese
1/2 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups shredded mozzarella cheese


Instructions

Preheat oven to 350°F (175°C).
Cook penne pasta according to package instructions; drain and set aside.
In a large skillet, heat olive oil over medium heat. Add garlic and onion; cook until onion is translucent.
Add Portobello mushrooms to the skillet and cook until tender.
Stir in spinach and cook until wilted.
In a large bowl, mix sour cream, Parmesan cheese, milk, salt, and pepper.
Combine the cooked pasta and the mushroom-spinach mixture with the sour cream mixture. Mix well.
Transfer to a baking dish and top with shredded mozzarella cheese.
Bake for 25-30 minutes, or until cheese is bubbly and golden.
